Home Baked All-American Apple Pie

Never Fail Pie Crust (2 double crusts):
3 c. flour
1 1⁄4 c. shortening
1 tsp salt
1 egg beaten
5 Tbsp water
1 Tbsp vinegar

Cut shortening into flour and salt. Combine egg, water and vinegar. Pour liquid into flour mixture all at once. Blend with spoon until flour is moistened. It keeps in refrigerator up to 2 weeks.

Filling
1⁄2 c. sugar
1⁄4 c. flour
1 tsp cinnamon
Dash salt
6 c. thinly sliced tart apples
2 Tbsp. butter or margarine

Heat oven to 425 degrees F. Prepare pastry. Stir together sugar, flour, cinnamon and salt; mix with apples. Turn into pastry-lined pie pan; dot with butter. Cover with top crust, which has slits cut in it; seat and flute. Cover edge with 2-3” strip of foil to prevent excessive browning. Remove foil for last 15 minutes of baking. Bake 40-50 minutes or until crust is brown and juice begins to bubble through slits.
