Bayfield Berry Capital of Wisconsin

Red Raspberry Cordial - As printed in Gourmet Magazine - Submitted by Mary Phillips, Old Rittenhouse Inn

4 cups Bayfield raspberries
4 cups sugar
2 cups gin

In a 1-gallon jar fitted with a lid, combine the raspberries, sugar and gin. Stir the mixture well. Secure the lid and let the mixture stand for four months, stirring it once per week. Strain the mixture into a pitcher using a cheesecloth-lined sieve, pressing hard on the solids. Return the liquid to the jar.

Yield is 4 one-cup servings.
